Salmon with Orange and Thyme

Salmon is famous for a reason – its a celebration of health and taste at the same time. In our opinion, omega-3s rich seafood should be cooked with less oil and lots of citrus and that’s what we show you in today’s recipe – Salmon wrapped in foil and grilled with lots of citrus flavour oranges, and the fragrance of thyme. As you cook these steaks you will get the citrus aroma with thyme hitting you and making your palette salivate before bitting into it.

Ingredients

  • 4 salmon steaks
  • 1 orange cut into sections
  • 1 tbs olive oil
  • 50g butter
  • 4 sprigs of thyme

Method

  1. Preheat the oven to 180 degrees.
  2. Wash the fish and pat dry.
  3. Cut off 4 slices of orange and press the juice from the rest.
  4. Oil some baking paper with a brush and then place the orange slices and top with the salmon pieces, season with salt and pepper.
  5. Top each portion with a knob of butter and some thyme.
  6. Fold the baking paper enough to add some orange juice to each packet.
  7. Close the paper packets and bake in the oven for about 20 minutes. Depending upon the size of the salmon steaks.

Alternative – Lemon Pepper Salmon

Ingredients

  • 1 lb salmon fillet, skin removed#
  • 1 tbs freshly grated lemon zest
  • 1/4 tsp salt
  • 1/4 tsp cracked black pepper
  • 1 tbs butter
  • 1 tbs fresh lemon juice

Lemon wedges, if desired

Method

  1. Heat oven to 400°F. Line rimmed baking pan with aluminium foil.
  2. Place salmon into prepared pan. Sprinkle with lemon zest, salt and pepper. Divide butter evenly on top of salmon. Pour lemon juice over top.
  3. Bake, uncovered, 12-15 minutes or until salmon flakes easily with fork. Serve with lemon wedges and fresh parsley sprigs, if desired.
