Plaice and Prawn Gratin

The original of this recipe came from a Marks & Spenser book, ‘Fish and Seafood.’ However it seemed to us to have two or three too many ingredients including scallops. This is a cut down version which we think gives it more taste. Less is best!

Ingredients

  • 2 plaice fillets
  • 125 g prawns
  • 1 small shallot finely chopped
  • 150 g tomato juice
  • 2 tbsp of tomato puree
  • 1 tbsp of chopped basil
  • 20 g of grated cheese

Method

  1. Heat the oven to 200 degrees C.
  2. Submerge the fillets of place in a frying pan of water so that they are just covered. Heat the pan over a medium heat until the fillets turn opaque. Drain and set aside in an ovenproof dish.
  3. Gently fry the shallot and then add the tomato juice, tomato puree and the chopped basil. Cook gently for 2 -3 minutes.
  4. Cover the top of the fillets with the mixture then place the prawns on top of the mixture.
  5. Cover the fillets with the grated cheese and cook in the oven until the cheese is nice and crispy.
