King Prawns with Vegetables recipe

Crunchy seafood dish. A lovely dish to go perfectly with some rice or noodles. Full of zing, this dish is sweet and crunchy and full of meaty king prawns, what more can one ask for? Give it a try with your friends or family!

Ingredients
  • 1 tbsp, vegetable oil
  • 1 clove garlic, crushed and chopped (or pureed)
  • ½ green pepper, diced into chunks
  • ½ carrot, sliced
  • 5 baby chestnut mushrooms
  • 50g beansprouts
  • 50g bamboo shoots
  • 50g water chestnuts
  • 8-10 king prawns
  • 150ml, chicken stock
  • 1 tbsp cornflour mixture
  • ½ tsp salt, or to taste
  • 1 tsp soy sauce, or to taste
  • 1 tsp oyster sauce, or to taste
Instructions
  1. Prepare vegetables, stock and cornflour mixtures
  2. Ensure you have taken off the shell off your king prawns and that they are cooked. If you have bought them raw, take off the shells, boil some water in a pan and boil the king prawns for about two minutes until pink.
  3. Heat oil in a wok, on high heat until hot.
  4. Add garlic, green pepper, carrots, mushrooms and bamboo shoots and water chestnuts and fry for one minute
  5. Add king prawns and beansprouts and fry for two minutes
  6. Pour in one ladle of chicken stock and leave for two minutes or until it is starting to boil.
  7. Then gradually add the 2 tablespoons of cornflour mixture. Once this mixture is well incorporated the sauce should thicken. See our How To section on thickening sauces for more details on this.
  8. Lastly add in salt, soya sauce and oyster sauce and serve.
  9. Serve with rice or fried noodles
